150 g/5 oz plain (all-purpose) flour
75g/3 oz cornmeal
15 ml/1 tbsp baking powder
2.5 ml salt
100g/4 oz maple syrup
100g/4 oz lard (shortening), melted
2 eggs, beaten
Method:
Mix together the dry ingredients, then
blend in the syrup, lard and eggs and stir until well mixed. Spoon
into a greased 23 cm/9 in baking tin (pan) and bake in a preheated
oven at 220°C/425°F/ gas mark 7 for 25 minutes until well risen and
golden brown, and beginning to shrink away from the sides of the tin.
