150 g/5 oz soft brown sugar
150 g/5 oz plain (semi-sweet) chocolate
2 bananas, mashed
3 eggs, beaten
200 g/7 oz plain (all-purpose) flour
10 ml/2 tsp baking powder
Method:
Melt the butter or margarine with the
sugar and chocolate. Remove from the heat, then stir in the bananas,
eggs, flour and baking powder until smooth. Spoon into a greased and
lined 900 g/2 lb loaf tin (pan) and bake in a preheated oven at
150°C/300°F/gas mark 3 for 1 hour until springy to the touch. Leave to
cool in the tin for 5 minutes before turning out to finish cooling on
a wire rack.
