350g/12 oz dried mixed fruit (fruit cake
mix)
100g/4 oz butter or margarine
100 g/4 oz soft brown sugar
150 ml water
2 large eggs, beaten
225 g/8 oz/2 cups self-raising (self-rising) flour
5 ml/1 tsp ground mixed (apple-pie)

Method:
Put the fruit, butter or margarine,
sugar and water in a pan, bring to the boil, then simmer gently for 15
minutes. Leave to cool. Stir in spoonfuls of the eggs alternately with
the flour and mixed spice and mix well. Spoon into a greased 20 cm] 8
in cake tin (pan) and bake in a pre-heated oven at 140°C/275°F/gas
mark 1 for 1–1.5 hours until a skewer inserted in the centre comes out
clean.
