Cut-and-come-again Cake Recipe

Ingredients: Makes one 20 cm / 8 in cake

275 g/10 oz dried mixed fruit (fruit cake mix)
100 g/4 oz butter or margarine

150 ml water
1 egg, beaten
225 g/8 oz plain (all-purpose) flour
A pinch of salt
100 g/4 oz caster (superfine) sugar

Method:

Put the fruit, butter or margarine and water in a pan and simmer for 20 minutes. Allow to cool. Add the egg, then gradually stir in the flour, salt and sugar. Spoon into a greased 20 cm/8 in cake tin (pan) and bake in a preheated oven at 160°C/325°F/gas mark 3 for 1 1/4 hours until a skewer inserted in the centre comes out clean.
