225 g/8 oz self-raising (self-rising)
flour
350g/12 oz mincemeat
75 g/3 oz dried mixed fruit (fruit cake
mix)
3 eggs
150 g/5 oz soft margarine
150 g/5 oz soft brown sugar
Method:
Mix together all the ingredients until
well blended. Turn into a greased and lined 20 cm/8 in cake tin and
bake in a preheated oven at 160°C/325°F/gas mark 3 for 1 3/4 hours
until well risen and firm to the touch.
