225 g/8 oz soft brown sugar
300 ml water
100 g/4 oz butter or margarine
15 ml/1 tbsp black treacle (molasses)
175 g/6 oz raisins
5 ml/1 tsp ground cinnamon
2.5 ml grated nutmeg
2.5 ml allspice
225 g/8 oz plain (all-purpose) flour
5 ml/1 tsp baking powder
5 ml/1 tsp bicarbonate of soda (baking soda) |
Method:
Melt the sugar, water, butter or
margarine, treacle, raisins and spices in a small pan over a medium
heat, stirring continuously. Bring to the boil and simmer for 5
minutes. Remove from the heat and beat in the remaining ingredients.
Spoon the mixture into a greased and lined 900 g/2 lb loaf tin (pan)
and bake in a preheated oven at 180°C/ 350°F/gas mark 4 for 50 minutes
until a skewer inserted in the centre comes out clean.
