Boiled Chocolate Icing Recipe

Ingredients: Makes enough to cover one 23 cm / 9 in cake

275 g/10 oz caster (superfine) sugar
100 g/4 oz/1 cup plain (semi-sweet) chocolate
50g/2 oz cocoa (unsweetened chocolate) powder
120 ml/4 fl oz water

Method:

Bring all the ingredients to the boil, stirring until well blended. Boil over a medium heat to 108°C/220°F or when a long thread forms when pulled between two teaspoons. Pour into a wide bowl and beat until thick and glossy.
