Lemon Filling Recipe

Lemon Filling Recipe

Ingredients: Makes 250 ml / 8 fl oz / 1 cup

100g/4 oz caster (superfine) sugar
30 ml/2 tbsp cornflour (cornstarch)

60 ml/4 tbsp lemon juice
15 ml/1 tbsp grated lemon rind

120 ml/4 fl oz water
A pinch of salt
15 ml/1 tbsp butter or margarine

Method:

Mix together all the ingredients except the butter or margarine in a small pan over a low heat, stirring gently until the mixture is well blended. Bring to the boil and boil for 1 minute. Stir in the butter or margarine and leave to cool. Chill before using.
