Orange Fruitcake Glaze Recipe

Ingredients: Makes enough to glaze one 25 cm / 10 in cake

50g/2 oz caster (superfine) sugar
30 ml/2 tbsp orange juice
10 ml/2 tsp grated orange rind

Method:

Combine the ingredients in a small pan and bring to the boil, stirring constantly. Remove from the heat and brush the mixture over the top and sides of a cooled cake. Allow to set. Bring the glaze to the boil again and brush a second coat over the cake.
