Sugar Free Icing Recipe

Ingredients: Makes enough to cover one 15 cm / 6 in cake

50g/2 oz fructose

A pinch of salt
1 egg white
2.5 ml lemon juice

Method:

Process the fructose powder in a food processor until it is as fine as icing sugar. Blend in the salt. Transfer to a heatproof bowl and whisk in the egg white and lemon juice. Place the bowl over a pan of gently simmering water and continue to whisk until stiff peaks form. Remove from the heat and whisk until cool.
