White Frosting Recipe

Ingredients: Makes enough to cover one 23 cm / 9 in cake

225 g/8 oz/1 cup granulated sugar

1 egg white
30 ml/2 tbsp water
15 ml/1 tbsp golden (light corn) syrup

Method:

Beat together the sugar, egg white and water in a heatproof bowl set over a pan of gently simmering water. Continue to beat for up to 10 minutes until the mixture thickens and forms stiff peaks. Remove from the heat and add the syrup. Continue to beat until of a spreading consistency.
