Microwave Applesauce Cake Recipe

Ingredients: Makes one 20 cm / 8 in cake

100 g/4 oz butter or margarine, softened
175 g/6 oz soft brown sugar

1 egg, lightly beaten
175 g/6 oz plain (all-purpose) flour
2.5 ml baking powder A pinch of salt
2.5 ml ground allspice

1.5 ml grated nutmeg

1.5 ml ground cloves
300 pt unsweetened apple puree (sauce)
75 g/3 oz raisins
Icing (confectioner's) sugar for dusting

Method:

Cream together the butter or margarine and brown sugar until light and fluffy. Gradually beat in the egg, then fold in the flour, baking powder, salt and spices alternately with the apple puree and raisins. Spoon into a greased and floured 20 cm/8 in square microwave dish and microwave on High for 12 minutes. Leave to cool in the dish, then cut into squares and dust with icing sugar.
