Mix together the sugar, ground almonds,
eggs and vanilla essence until well blended. Spoon into a greased and
lined 30 x 23 cm/12 x 9 in baking tray and sprinkle with the pine
nuts. Bake in a preheated oven at 180°C/350°F/ gas mark 4 for 1 hours
until browned and firm to the touch. Cut into squares.
