Method:
Blend the yeast with a little of the
warm water and leave in a warm place for about 15 minutes until
frothy. Mix together the flours, milk powder and salt and make a well
in the centre. Stir in the yeast mixture and the remaining warm water
and mix to a dough. Knead well until smooth and elastic. Place in an
oiled bowl and cover with clingfilm (plastic wrap). Leave in a warm
place for 45 minutes until doubled in size.
Add the cheese, mixed fruit, curry powder and ginger to the dough and
knead into the mixture. Shape into loaves and place on a greased
baking (cookie) sheet. Cover and leave to rise for 15 minutes.
Sprinkle with the oats and bake in a preheated oven at 230°C/450°F/gas
mark 8 for 25 minutes until golden on top and hollow-sounding when
tapped on the base.
