Apple and Date Scones Recipe

Ingredients: Makes 12

50 g/2 oz butter or margarine

225 g/8 oz/2 cups plain (all-purpose) flour
5 ml/1 tsp mixed (apple pie) spice

5 ml/1 tsp cream of tartar
2.5 ml bicarbonate of soda (baking soda)
25 g/1 oz/2 tbsp soft brown sugar
1 small cooking (tart) apple, peeled, cored and chopped
50 g/2 oz stoned (pitted) dates, chopped
45 ml/3 tbsp milk

Method:

Rub the butter or margarine into the flour, mixed spice, cream of tartar and bicarbonate of soda. Stir in the sugar, apple and dates, then add the milk and mix to a soft dough. Knead lightly, then roll out on a floured surface to 2.5 cm/ 1 in thick and cut into rounds with a biscuit (cookie) cutter. Place the scones (biscuits) on a greased baking (cookie) sheet and bake in a preheated oven at 220°C/ 425°F/gas mark 7 for 12 minutes until risen and golden brown.
