Cheese Scones Recipe

Ingredients: Makes 12

225 g/8 oz/2 cups plain (all-purpose) flour
2.5 ml/0.5 tsp salt
15 ml/1 tbsp baking powder
50 g/2 oz butter or margarine

100 g/4 oz/1 cup Cheddar cheese, grated
150 ml milk

Method:

Mix together the flour, salt and baking powder. Rub in the butter or margarine until the mixture resembles breadcrumbs. Stir in the cheese. Gradually blend in the milk to make a soft dough. Knead lightly, then roll out to about 1 cm/0.5 in thick and cut into 5 cm/2 in rounds with a biscuit (cookie) cutter. Place the scones (biscuits) on a greased baking (cookie) sheet and bake in a preheated oven at 220°C/425°F/gas mark 7 for 12—15 minutes until well risen and golden on top. Serve warm or cold.
