Orange and Raisin Scones Recipe

Ingredients: Makes 12

50 g/2 oz butter or margarine

225 g/8 oz/2 cups plain (all-purpose) flour
2.5 ml bicarbonate of soda (baking soda)
100 g/4 oz raisins
5 ml/1 tsp grated orange rind
60 ml/4 tbsp orange juice
60 ml/4 tbsp milk
Milk to glaze

Method:

Rub the butter or margarine into the flour and bicarbonate of soda, then stir in the raisins and orange rind. Work in the orange juice and milk to make a soft dough. Roll out on a lightly floured surface to about 2.5 cm/1 in thick and cut into rounds with a biscuit (cookie) cutter. Place the scones (biscuits) on a greased baking (cookie) sheet and brush the tops with milk. Bake in a preheated oven at 200°C/400°F/gas mark 6 for 15 minutes until lightly browned.
