Simple Scones Recipe

Ingredients: Makes 10

225 g/8 oz/2 cups plain (all-purpose) flour
A pinch of salt
2.5 ml bicarbonate of soda (baking soda)
5 ml/1 tsp cream of tartar
50 g/2 oz butter or margarine, diced
30 ml/2 tbsp milk
30 ml/2 tbsp water

Method:

Mix together the flour, salt, bicarbonate of soda and cream of tartar. Rub in the butter or margarine. Slowly add the milk and water until you have a soft dough. Knead quickly on a floured surface until smooth, then roll out until 1 cm or 1/2 in thick and cut into 5 cm/2 in rounds with a biscuit (cookie) cutter. Place the scones (biscuits) on a greased baking (cookie) sheet and bake in a preheated oven at 230°C/450°F/gas mark 8 for about 10 minutes until well risen and golden brown.
