Method:
Mix together the flour, salt,
bicarbonate of soda and cream of tartar. Rub in the butter or
margarine until the mixture resembles breadcrumbs. Stir in the sugar
and sultanas. Mix the lemon juice into the milk and gradually stir
into the dry ingredients until you have a soft dough. Knead lightly,
then roll out to about 1 cm/0.5 in thick and cut into 5 cm/2 in rounds
with a biscuit (cookie) cutter. Place the scones (biscuits) on a
greased baking (cookie) sheet and bake in a preheated oven at
230°C/450°F/gas mark 8 for about 10 minutes until well risen and
golden brown.
