Hot Milk Cake Recipe

Ingredients: Makes one 23 cm / 9 in cake

4 eggs, lightly beaten
5 ml/1 tsp vanilla essence (extract)

450 g/1 lb/2 cups granulated sugar

225 g/8 oz/2 cups self-raising (self-rising) flour
10 mL2 tsp baking powder
2.5 ml/0.5 tsp salt
250 ml/8 fl oz/1 cup milk
25 g/1 oz/2 tbsp butter or margarine

Method:

Whisk together the eggs, vanilla essence and sugar until light and fluffy. Gradually beat in the flour, baking powder and salt. Bring the milk and butter or margarine to the boil in a small pan, then stir into the mixture and blend well. Spoon into a greased and floured 23 cm/9 in cake tin (pan) and bake in a preheated oven at 180°C/350°F/gas mark 4 for 40 minutes until golden brown and springy to the touch.
