Forest Rounds Recipe

Ingredients: Makes three 350 g/12 oz loaves

450 g/1 lb/4 cups wholemeal (wholewheat) flour
20 ml/4 tsp baking powder

45 ml/3 tbsp carob powder

5 ml/1 tsp salt
50 g/2 oz/0.5 cup ground hazelnuts

50 g/2 oz/0.5 cup chopped mixed nuts

75 g/3 oz vegetable fat (shortening)
75 g/3 oz clear honey

300 ml milk
2.5 ml/0.5 tsp vanilla essence (extract)

1 egg, beaten

Method:

Mix together the dry ingredients, then rub in the vegetable fat. Dissolve the honey in the milk and vanilla essence and mix into the dry ingredients until you have a soft dough. Shape into three rounds and press to flatten slightly. Cut each loaf partly through into six portions and brush with beaten egg. Place on a greased baking (cookie) sheet and bake in a preheated oven at 230°C/450°F/gas mark 8 for 20 minutes until well risen and golden brown.
