50g/2 oz butter or margarine, softened
75 g/3 oz caster (superfine) or soft brown sugar
2 large bananas, chopped
175 g/6 oz plain (all-purpose) flour
7.5 ml/1.5 tsp baking powder
2 eggs, beaten
50g/2 oz walnuts, roughly chopped |
Method:
Cream together the butter or margarine
and sugar. Mash the bananas and stir into the mixture. Mix the flour
and baking powder. Add the flour, eggs and nuts to the bananas mixture
and beat well. Spoon into a greased and lined 18 x 28 cm/7 x 11 in
cake tin, level the surface and bake in a preheated oven at
160°C/325°F/gas mark 3 for 30-35 minutes until springy to the touch.
Leave to cool for a few minutes in the tin, then turn out on to a wire
rack to finish cooling. Cut into about 14 bars.
