225 g/8 oz/2 cups wholemeal (wholewheat)
flour
30 ml/2 tbsp cold water
450 g/1 lb cooking (tart) apples, peeled, cored and sliced
15 ml/1 tbsp lemon juice
50 g/2 oz sultanas (golden raisins)
50 g/2 oz soft brown sugar
Method:
Rub the butter or margarine into the
flour until the mixture resembles breadcrumbs. Add enough of the cold
water to mix to a pastry (paste). Roll out and use to line a greased
20 cm/8 in flan ring. Toss the apples in the lemon juice and arrange
in the pastry case. Sprinkle with the sultanas and sugar. Roll out the
pastry trimmings and make a lattice over the top of the filling. Bake
in a preheated oven at 190°C/375°F/gas mark 5 for 30 minutes.
